The Hernandez family runs the Nogales farm in Bruselas, Huila. They are know for their Grand Reserve, Equilibrium, Alchemy and Eccentric categories of coffee. This Bourbon Pimienta is part of the Grand Reserve series and comes from El Guamo. El Guamo is a steep, dramatic mountain lot and home to our 4,000 Bourbon Pimienta trees, which stand out every year for their vibrant, complex fruit profiles. It has become one of our most sought-after micro-lots, yielding a highly exclusive annual production of only 4,000 kg.


Grand Reserve showcases the pinnacle of each varietal. It is a strict selection of the finest cherries harvested at their absolute peak of sugar concentration and aromatic potential. Representing just 10% of our entire production, this exclusive offering celebrates the ultimate expression of both varietal and terroir.

"This year, after much searching for the perfect climate we were finally able to purchase a new farm, Niebla. Sitting at up to 2150 meters above sea level we have been working to plant this farm with exceptional varietals such as Geisha Panama & Typica Mejorado to offer our most exclusive and luxurious coffees to date.
We have also taken the step to control dry milling at our farm with the installation of our own fit for purpose facility. It is a great milestone for us, now being able to control every step of our coffees journey to deliver the best artisan product to our customers 100% produced at the farm."

Recommended Brewing

This naturally fermented (24hrs) coffee benefits from classical extraction recipes. use 1:14-1:15, medium ground, 95c water (with slightly higher GH, and maintaining low KH), use standard paper and a Tetsu Kasuya 4:6 pouring structure to build a nice body in the cup whilst maintaing extraordinary complexity, depth and vibrant harmony
