A noble classic composed of the "Big Three" varietals that have defined the Colombian specialty coffee landscape for the last few decades. This is a washed coffee composed of Caturra, Castillo and Colombia Supremo (the unofficial “larger bean” variety of the Colombia cherry). The specific selection of these 3 varietals/cultivars combines the classical Colombian clean finish from the Caturra, with slightly heavier chocolate body with the Castillo and sweet caramel brought by the Supremo Colombia

Farmer

Finca Los Árboles is a small, family‑run coffee farm located between Pitalito and San Agustín in Huila, owned by Doña Yudy Guaca and Don Arley Delgado. It sits in a protected natural reserve (UNESCO biosphere reserve Cintrón Andino) near the Magdalena River at 1700m and produces traditional, disease‑resistant varieties with a focus on clean, consistent cup quality.

Recommended Brewing

Use classic espresso settings for this coffee, closer to 1:2.5 is the best. Get more sweetness and fruits by grinding slightly coarser and reducing the pump pressure.

Classic 1:16 pour over on a medium fast (CAFEC ABACA) paper with a medium grind makes a great all day coffee
